Mini Watermelon & Seasonal Fruit Bowls

My favorite thing about making mini watermelon & seasonal fruit bowls with the Littles is making playful bowls out of the rinds! There is nothing more that I enjoy than making a production out of our meals.

 

This is a simple yet playful snack for your entire family. It is extremely quick and tasty for you to make. We especially enjoy eating this during the hotter months.

 

Mini Watermelon & Seasonal Fruit Bowl Ingredients

First, set each watermelon on its side (not the stem ends) on a flat surface. Now cut a small thin piece off (not the stem sides) of each side so the watermelon will sit flat. There should be 2 cuts.

 

Next flip the melons to rest on their cut sides and cut the watermelon in half and use the melon baller to cut the fruit out. Now use a sharp knife to clean up the inside off the fruit so the inside rind looks nice and neat.

Now toss the watermelon, 1 cup of the blueberries, all but 1/4 cup of the red onion, 1/2 of the fresh mint, and 1/3 cup of the feta cheese.

 

Mini Watermelon Bowl Ingredients

 

Finally scoop the mixture into each of the watermelon halves. Garnish the top of each bowl with the remaining blueberries, red onions, fresh mint, and feta cheese.

Ingredients

Mini Watermelon & Seasonal Fruit Bowls

  • 2 Watermelons Personal Size
  • 1 1/2 cups Blueberries
  • 1 Red Onion (small) Thinly Sliced
  • 1/4 cup Fresh Mint Loosely Packed
  • 2/3 cup Feta Cheese (about 3oz) Crumbled

Tequila Lime Dressing

  • 6 tbsp Lime Juice Freshly Squeezed
  • 2 tbsp Tequila
  • 1/4 cup Honey
  • 1/2 tsp Salt Kosher or Sea Salt
  • 2 tbsp Fresh Mint Chopped
  • 2 tbsp Red Wine Vinegar

Tequila Lime Dressing

  • Whisk the lime juice, tequila (I don’t add in the Littles & Poppa’s dressing), honey, salt, fresh mint, and red wine vinegar together. Refrigerate if you are not going to use immediately.

Notes

  • You can use whatever kind of cheese your family prefers the best
  • Don’t forget to add the fruit that is seasonal to your area and that your family prefers.
  • I always serve my Dressings on the side so everyone can decide if and/or how much they want!!!
  • I do NOT add tequila to the Littles or Poppa Bear’s Dressing...
