How to Make a Simple Streusel Sweet Potato Casserole

There is nothing more that I love than sweet potatoes! I love them in any form that you can imagine them cooked! This recipe is a slightly tweaked version of a copycat recipe. I normally add this as a side dish when I am making fancy meals.

Please feel free to tweak this recipe in order to fit your family’s taste buds and dietary needs. I normally omit eggs or make 2 of a food item since Brother Bear is allergic to eggs.

INSTRUCTIONS

Pre-heat oven 400 degrees F. First, poke sweet potatoes with a fork all around each potato. Put them on a baking sheet for 60 to 80 minutes, or until they are tender. I just place mine in the oven.

 

Bake Sweet Potatoes

Once the potatoes are cool enough to hold scrape out the insides. Add 6 cups of the mashed sweet potatoes into your mixing bowl. Use your mixer on high to beat the potatoes until they are mashed and smooth.



Add the dark brown sugar, heavy whipping cream, butter, cinnamon, and salt to the sweet potatoes. Mix until ingredients are incorporated.

 

 


Now, set the oven to 350 degrees F. Next, pour your sweet potato mixture into your baking dish.

While the sweet potatoe mixture is baking start making your streusel mixture by grinding the rolled oats to a coarse flour using a food processor. Make sure there are still visible bits of oats. If you don’t have a food processor a blender will also work.

Combine the oat flour with the brown sugar, flour, and cinnamon in a small bowl. Cut the cold butter into the dry mixture using a pastry knife or a fork.You should have a crumbly mixture with pea-size bits. Sprinkle this oatmeal streusel over the sweet potato mixture and pop it into the oven for 50 to 60 minutes, or until the top begins to brown slightly. 

Once you remove the casserole from the oven immediately spread the marshmallows on top. Let it sit for about 15 minutes. Once the heat from the casserole has melted the marshmallows it’s ready to serve.

Equipment

  • Food Processor (or a Blender)

Ingredients

  • 6 large Sweet Potatoes (about 6 cups)
  • 3/4 cup Dark Brown Sugar
  • 1/2 cup Heavy Whipping Cream
  • 1/4 cup Unsalted Butter melted
  • 1/4 tsp Ground Cinnamon
  • 1/4 tsp Salt
  • 2 cups Mini Marshmallows

Oatmeal Streusel

  • 1 cup Rolled Oats
  • 8 tbsp Dark Brown Sugar
  • 4 tbsp All-Purpose Flour
  • 1/2 tsp Ground Cinnamon
  • 8 tbsp Unsalted Butter cold
